Long pepper (Piper longum) is the ancestor of everything we know as pepper. Before Piper nigrum black pepper conquered global spice trade, long pepper was THE pepper — used by ancient Greeks, Romans, and Ayurvedic practitioners for millennia. It fell from fashion after the 17th century as cheaper black pepper flooded European markets, and was nearly forgotten.

Long pepper is darker and more complex than black pepper — think warm, earthy, sweetly spiced with hints of cinnamon, ginger, and cardamom. The heat is deeper and slower-building than black pepper, and it lingers with a pleasant warmth rather than a sharp bite.

History

Long pepper traveled the ancient Silk Road and spice routes from South Asia to the Mediterranean. Ancient Roman cookbook Apicius references it constantly. Medieval European cooks used it in spiced wine (hippocras), meat dishes, and sauces. It was revived by the modern chef movement as culinary historians rediscovered forgotten ingredients.

How to Use

Long pepper is sold as finger-shaped catkins that look like small pine cones. Grate or grind directly over food, or crush in a mortar. Use anywhere you’d use black pepper for a more complex, layered result.
